Ingredients
- Goat head and offal 1 kg
- Green bananas 2
- Yam 300 g
- Flour dumplings 8
- Carrot 1
- Scotch bonnet pepper 1
- Thyme, a little
- Scallion 1
How to make it (one way)
- Clean the goat head and offal well and cut up
- Simmer in water for 1 to 2 hours
- Add green bananas, yam, carrot and dumplings
- Add the scotch bonnet, thyme and scallion and keep simmering
- Season with salt and serve hot
⚠️ Scotch bonnets are very hot. Adding the pepper whole, uncut, keeps the heat gentler.
