A whole sheep's head and hooves simmered for hours into a rich soup; the tongue, cheeks, eyes and brain are all eaten. In Iran it's a winter breakfast at specialist shops.

Ingredients
- 1 sheep's head
- 4 sheep's trotters
- 2 onions
- 1 head garlic
- 100 g chickpeas
- 1 tsp turmeric
- 1 lemon
- Flatbread
How to make it (one way)
- Singe and scrub the head and trotters.
- Put them in a big pot with onion, garlic and turmeric.
- Simmer gently for about 6 hours.
- Separate the tongue, cheeks, brain and other parts.
- Dip bread in the broth and squeeze lemon over the meat.
