Ingredients
- Eel, 1 (about 500 g)
- Water 1 L
- Lemon juice 1 tbsp
- Nutmeg, a pinch
- Bay leaf 1
- Salt and white pepper, a pinch
- Malt vinegar, as needed
How to make it (one way)
- Remove the eel's head and guts and chop, bones and all, into pieces about 3 cm
- Put in a pot with water, lemon juice, nutmeg and bay leaf
- Simmer gently for 30 minutes, skimming the foam
- Put the eel and liquid in a bowl and chill in the fridge
- When the eel's gelatin has set the liquid, add malt vinegar and white pepper and eat
⚠️ The bones stay in, so small children should eat carefully. Raw eel blood is toxic, so keep it away from eyes and cuts when preparing.
