Haggis
Sheep offal and oats in a stomach
Think of it as: Like a giant, peppery sausage with an oatmeal heart
What does it taste like?
A rich, liver-y crumble with plenty of pepper, plus a nice pop from the oats.
What is it?
Sheep's heart, liver and lungs, chopped and mixed with oats, stuffed into a sheep's stomach and boiled. On poet Robert Burns's birthday, it's cut open while a poem is recited.Source: Wikipedia
How locals eat it
Served with mashed turnip and potato. On Burns Night, January 25, a poem is recited before it's cut.

Ingredients
- Sheep's heart, liver and lungs, 1 kg total
- Oatmeal 200 g
- Onions 2
- Beef suet 100 g
- Black pepper and nutmeg, a little
- Sheep's stomach (or an ovenproof bag)
Can't find it? Instead of sheep offal, make it with liver, ground meat and oatmeal.
How to make it (one way)
- Boil the offal for about 1 hour, then chop finely
- Toast the oatmeal in a pan until fragrant
- Mix the offal, oats, onion, suet, spices and some of the cooking liquid
- Fill the stomach about halfway and tie it shut (it swells, so don't overfill)
- Simmer gently for 3 hours. Serve with mashed turnip and potato
