Ingredients
- 500 ml fresh duck or pig blood
- A little fish sauce
- 100 g cooked offal, chopped
- 30 g peanuts
- Mint and Vietnamese coriander
- 1 lime
How to make it (one way)
- Mix a little fish sauce into the fresh blood so it sets.
- Spread chopped offal and peanuts on a plate.
- Pour in the blood.
- Leave it until it sets like jelly.
- Top with herbs and lime.
⚠️ Raw blood can carry deadly infections such as Streptococcus suis. Vietnamese health authorities urge people not to eat it.
